- 1 Normal size eggplant
- Olive oil
- Garlic Powder
- Turmeric Powder (optional)
- Black pepper
- Mozzarella cheese (or cheese of your choice)
- Sesame seed (optional)
To prepare the eggplant, slice it horizontally into 1/2-inch-thick circles.
Prepare a mixture by combining olive oil, salt, black pepper, garlic powder, and ginger powder. Season the eggplant slices using this mixture with the help of silicon brush (you may also use any other brush or rub it by hand).
Place the seasoned slices in the basket, arranging them in a single layer. Then, place the basket in the air fryer and heat it to 370 °F for 10 min. In 10 min, the slices will turn soft and golden brown.
After 10 minutes, remove the air fryer basket and add tomato and mozzarella cheese toppings to the slices and sprinkle sesame seeds (optional).
After adding the tomato and cheese toppings to the eggplant slices, cook them again for 3 minutes at 370°F.
